Before the beef arrives at KS on the Keys, our butchers ensure the beef is aged to a minimum of
35 days. Ageing is important both to the flavour and texture of the meat. This process allows
natural enzymes to break down fibres and tenderize the meat. Our beef is always fresh never
frozen to ensure you receive the most quality cut of beef. |
